Holy cats! TWO cookie recipes in TWO weeks!?! You are going to kill me but I just had to post this one! You see, a sweet friend of mine, came by my house a couple of weeks ago and not only did she drop off some lovely little dresses for Eloise but she also dropped off a whole bunch of Caramel Apple Cookies...that were promptly eaten that night! Every. Last. One. Yes!! They were that good. Anyways, since she dropped off those cookies I could not get them out of my head and then I did what any normal/sane person would do, I spent the next week doing everything in my power to re-create those darn cookies.
Ahem, so here we are. I have finally perfected this cookie, this recipe is exactly perfect. This is a drop-style cookie like your classic chocolate chip. The outcome gives a slightly crunchy (on day one) yet chewy (the next day) oatmeal-esque cookie with a little taste of heaven in the shape of lovely caramel and apple bits. My one huge tip to give to you is to PLEASE USE parchment paper. Trust me. After my 2nd attempt and 6 cookie sheets of baked on caramel later, I finally had that 'AHA' moment Oprah always talks about and started placing parchment paper on my cookie sheet before baking. WOWZA! I went from scrubbing (and scrubbing and scrubbing and soaking and scrubbing some more) caramel off of cookie sheets to a quick soap and water rinse. Duh!
Okay, so here it is, in all it's glory. Please enjoy every last bite!
Caramel Apple Cookies
1/2 cup butter, softened
1/2 cup shortening, butter flavor works best!
1/2 cup brown sugar, packed
1/2 cup white granulated sugar
1 tsp vanilla
1 1/2 cup all-purpose flour
1 tsp baking soda
1 tsp cinnamon
3 cups old-fashioned (not quick) oats
1 cup chopped dried apples
1 1/2 cup caramel bits
Preheat your oven to 350 degrees. In a large bowl, cream your butter, shortening, and both sugars together. Add your eggs and vanilla and mix well. In another bowl, mix together your flour, baking soda and cinnamon. Add the flour mixture to your butter mixture, mixing well. Stir in your oats, apple pieces and caramel bits. Drop by rounded tablespoons onto a parchment lined cookie sheet. Bake for 10 minutes. Let cookies cool for 2-3 minutes on parchment paper before removing cookies to a cooling rack. ENJOY!!
Place 1/2 cup of shortening and 1/2 cup of butter in a large bowl...
Cream it all together, real nice!
Then, add 1/2 cup of white sugar and 1/2 cup of packed brown sugar...
Cream the sugars together with the butter mixture.
Then, add your two eggs and your vanilla and mix well.
In another bowl, mix your flour, baking soda and cinnamon together.
Add your flour mixture to your butter mixture...
Then add your 3 cups of oats.
Next, chop up your dried apples until you have 1 cup of them.
Add your dried apples and 1 1/2 cups of caramel bits to oat mixture...
And mix everything up so it's nice and combined.
Drop rounded tablespoons onto a parchment lined cookie sheet (I greased the parchment paper too!)
Bake at 350 for 10 minutes.
And you get these little beauties!!
About 4 dozen of them too :)
Don't forget to let your cookies cool for a few minutes before removing them to a cooling rack. They need a bit to set up or they may fall apart!
