Dinner Tonight...Meatloaf Muffins!

Okay, so I have to tell you guys...I've never really liked meatloaf. Really!! It was always one of those meals that just sounded gross to me. Anyone else feel this way? I mean, meatloaf? C'mon, you have to admit it sounds yucky doesn't it? Ground up meat all mixed up with saltines or even better oatmeal (???...really, it's true, I've seen recipes with oatmeal!) and then thrown into a bread pan...umm yeah, not super appetizing to me. Definitely not my idea of comfort food....until now!

Sooo yeah, I went against all my inner meatloaf weirdness and made meatloaf for dinner the other night. Not just any meatloaf though, Meatloaf Muffins!! Doesn't it just sound cute...and yummy!?! Well, it is!!! And let me tell you this recipe is sooo good that I was even craving it later that night wishing my belly wasn't filled to capacity so I could have just one more (could leftovers ever be so exciting!) And then I wanted to make it again for dinner the next night although I had enough restraint not too *pats herself on the back*


Nom, nom, nom...sooo good!!


Alright, so here is the recipe. My hubby loved it, my kids loved it and well, I loved it. I hope you do too! It's super easy to whip up, try it for dinner tonight, you won't be disappointed!

Meatloaf Muffins

1 pound ground beef (or turkey!)
1 6 oz box of stuffing mix
1 cup water
3/4 cup ketchup
3/4 cup shredded cheddar cheese

In a large bowl, mix together ground beef, water and stuffing mix until well incorporated. Roll meat mixture into balls and press into the cups of a greased muffin tin. Make small indentations into the tops of the muffins and fill with ketchup. Bake at 350 degrees for about 30 minutes. Take out meatloaf muffins, sprinkle the tops with shredded cheese and return to the oven for an additional 5 minutes. Mmm...plate up those bad boys and enjoy a delicious meal with your fam.


This is seriously all you need for this meal...seriously easy, right???


Okay, so first mix your ground beef, stuffing and water together in a large bowl...


Then, roll about a 1/2 cup of the meat mixture into a ball with your hand and press it into the cups of a greased muffin pan, fill all 12 cups. Make little indentions at the top centers of each muffin like so...


Then just add a dollop of ketchup to the centers of each muffin...


Bake at 350 degrees for about 30 minutes, then pull them out and sprinkle some cheese on top and bake for an additional 5 minutes.


Yup, these babies look done to me!

Ohhh, can you smell it...

Okay, so you can't but don't you wish you could???


Ahh, a nice home cooked meal...

Ahem! Don't dis the meatloaf with oatmeal until you've tried it. I started making it that way when I started baking homemade bread because it seemed a waste to bake the bread, then smoosh it up into meatloaf. Now my kids won't eat it any other way!

I've never been a neatloaf fan either. My mom makes it with a hard boiled egg inside. Super gross! I've made something similar to this though. Before putting the meat mixture in the muffin tin, I press a refrigerated biscuit into the tin. Makes little bbq meatloaf cups (I sub bbq sauce for ketchup, too). Yummy!

I just saw something on Food Network this past weekend(I think the show was 24 Hour Restaurant Challenge), where they made meatloaf muffins, but then topped them mashed potatoes for the "icing." They were really cute, and TOTALLY looked like cupcakes.

We're vegetarians, so can not say that we've tried them though! :)

Yum! I made some little meatloaves in silicone heart shaped muffin cups for valentines day. I also made some in little ramekins b/c little things are cuter. I've never tried stuffing before but great idea, as is the cheese. I like to add a bit of worchestershire sauce and chopped green peppers to mine. They're also great topped with A1 Thick and Hearty sauce. :)

We do oatmeal meatloaf or meatballs. (almost weekly, YIKES!)The kids love it and I feel like it must be healtier than bread. Try it one day!

I love GOOD meatloaf. I can understand the detest for a lot of the "gross" kind out there. I make mine a little varied from yours, never tried stuffing, but I guess the bread and milk and eggs is the same jist. I put shredded carrots in mine along with the cheese. Also, instead of just ketchup, I mix in 1tbs of mustard and 3/4 c brown sugar. YUMM-O! Glad you finally found an enjoyable meatloaf!

I've tried meatloaf made with bread crumbs and oatmeal, and I can't tell a difference. All it really does is keep the meatloaf moist, so it's really the other things you put in it that add lots of flavor! My kids like for me to top ours with BBQ sauce! Yummy! Glad you tried it (and liked it), it's a super-easy dinner!

They are much cuter and fun to eat than a slab of meatloaf. And I love how the stuffing browns on top to make a crunch! The ketchup volcano is nummy too! We used turkey instead of beef because I'm a polpescetarian and it still turned out lovely.

I only eat my meatloaf but these sound really good. However, it would take like 100 of these little muffins to feed our family of 7. LOL But we might try it anyway. Maybe a good recipe for the kids to help with.

I made this for dinner tonight! It was yummy and super easy. This is the first meatloaf that I've ever tried and actually wanted to eat another bite! Thanks for sharing. Oh and we had donut muffins for dessert! Those were super yummy!

I too have never been much of a meatloaf fan! I think that's because my mother over cooked (and way too often) meatloaf when I was growing up - love her, but not her cooking, LOL - But as I've come to play around with recipes and have a man who loves meat and a house full of boys who follow suit, I've learned to make meatloaf that I like too... this recipe of yours will be tried here for sure! Thanks again for another wonderful and simple idea.

I made these tonight for my husband and I. He said he is usually not a big fan of meatloaf but this is the best recipe he's had! He also said even if they were gross, they're just too cute not to eat. LOL

I made these tonight. They were sooo good! And easy! Grandpa hasn't eaten his yet, because he's still out working, but the nice part is that it'll be easy to warm up just enough for his supper without having to reheat a whole big meatloaf.

My regular meatloaf recipe calls for either saltine crackers or oatmeal. I've always used oatmeal because it's healthier and provides a little texture, too.

Made these last night with ground turkey. I added a little brown sugar and used croutons instead of stuffing so I only added about 2 TB of water. I topped some with ketchup, some with BBQ sauce and the rest with teryaki sauce which was amazing! Nice change from making a loaf and slicing.

Made these tonight. You are right: I never really cared much for meatloaf--but these little guys were great! Moist and flavorful. I did add a dot of Siracha to the top of the ketchup dallop. YUM.
