Alrighty, so here's a super duper easy recipe for some Raspberry Oatmeal Bars that are to die for...no lie! What's not to love about them, I ask? Raspberry jam equals sweet deliciousness. Oatmeal equals healthy and good for your body. And then it's all put together in a nice, compact little bar which to me equals the perfect snack or dessert! You must try them. Really. Delish. No Lie. I mean it!!!
I told you, they are good. No Lie.
Raspberry Oatmeal Bars
1 cup all-purpose flour
1 cup rolled oats
1/2 cup packed light brown sugar
1/4 tsp baking soda
1/8 tsp salt
1/2 cup butter, softened
3/4 cup seedless raspberry jam
Preheat your oven to 350 degrees. Grease an 8 inch square pan, line with parchment paper and then grease well. Combine your dry ingredients together and mix in your butter until crumbly. Press 2 cups of the mixture into the bottom of your prepared pan. Spread jam on top and then sprinkle with remaining crumb mixture. Pressing lightly so top coat sticks into jam. Bake for 35-40 minutes or until lightly browned. Cool, cut into bars and ENJOY!
First, mix all your dry ingredients up...
Then, soften your butter...
Add your butter to the dry ingredients and mix with your hands or a pastry blender until crumbly. Kinda like making pie crust :)
Spread your jam on top of your base. If your microwave your jam for 15-20 seconds it will get nice and runny and easy to spread. (Just a little secret, some lovin' from me to you ;) )
If you don't use parchment paper, spread your jam leaving a 1/4 inch of space all the way around the edges...this will help prevent the jam from baking to your pan and therefore giving you tons of fun in the clean up department :)
Then sprinkle the remaining crumbly mixture on top of your jam and press it lightly with your hands.
If you want, melt a 1/2 cup of white chocolate chips in your microwave and drizzle on top.
A little less healthy but all the more tasty...
