Recipe: Raspberry Oatmeal Bars

Alrighty, so here's a super duper easy recipe for some Raspberry Oatmeal Bars that are to die for...no lie! What's not to love about them, I ask? Raspberry jam equals sweet deliciousness. Oatmeal equals healthy and good for your body. And then it's all put together in a nice, compact little bar which to me equals the perfect snack or dessert! You must try them. Really. Delish. No Lie. I mean it!!!

I told you, they are good. No Lie.

Raspberry Oatmeal Bars

1 cup all-purpose flour
1 cup rolled oats
1/2 cup packed light brown sugar
1/4 tsp baking soda
1/8 tsp salt
1/2 cup butter, softened
3/4 cup seedless raspberry jam

Preheat your oven to 350 degrees. Grease an 8 inch square pan, line with parchment paper and then grease well. Combine your dry ingredients together and mix in your butter until crumbly. Press 2 cups of the mixture into the bottom of your prepared pan. Spread jam on top and then sprinkle with remaining crumb mixture. Pressing lightly so top coat sticks into jam. Bake for 35-40 minutes or until lightly browned. Cool, cut into bars and ENJOY!

First, mix all your dry ingredients up...

Then, soften your butter...

Add your butter to the dry ingredients and mix with your hands or a pastry blender until crumbly. Kinda like making pie crust :)

It should look like so.

Press 2 cups of this mixture into your prepared pan.

Spread your jam on top of your base. If your microwave your jam for 15-20 seconds it will get nice and runny and easy to spread. (Just a little secret, some lovin' from me to you ;) )

If you don't use parchment paper, spread your jam leaving a 1/4 inch of space all the way around the edges...this will help prevent the jam from baking to your pan and therefore giving you tons of fun in the clean up department :)

Then sprinkle the remaining crumbly mixture on top of your jam and press it lightly with your hands.

Bake at 350 degrees for 35-40 minutes...until nice and golden brown!

Mmmm...deliciously healthy!


If you want, melt a 1/2 cup of white chocolate chips in your microwave and drizzle on top.

A little less healthy but all the more tasty...

Yummy!!!

These look so good! I wonder if I ever don't have jam, if I could just put some strawberries or raspberries in the blender with some sugar, and drizzle that on top. Gonna to have to try these soon. Do you mind if I repost the recipe on my blog?

Yum, Yummy!!! I am going to have to try this soon!! Just looking at your beautiful pics is making my mouth water!! :P I wonder if it would be a problem to switch to another jelly/jam like strawberry or apricot? Hubs is allergic to raspberries... Greta idea, topping with the melted chocolate! ♥

I made these this morning and they were awesome. I have a sister who is always trying to pump me full of her granola bars (they are super nasty). I am always avoiding the granola-ish recipes. This one looked good but it tastes even better. I just delivered a pan to may granola sister and she loved them. Thanks again for the great ideas. (oh, and I was out of raspberry jam so I used black berry and it rocked) (On another side note, I made your orange cake with lemonade and lemon extract instead of orange cause I love all ciris-- and it was a big hit too.)

I made these bars this morning and they're almost gone! They're scrumdiddlyumptious!! I've made something similar to this in the past, where the base was shortbread. However, I like this recipe even more, because it's healthier and super easy to prepare. Thanks for sharing!
